Magical Molokhia

In Saudi Arabia, I discovered this wonderful vegetable called Molokhia. It’s similar to spinach, but has a bit of the texture of okra: which I love!

It’s also really good for you: tons of antioxidants, rich in betacarotene, iron, calcium, Vitamin C and more than 32 vitamin and minerals and trace elements. I had it served in a deliciously thick, flavorful soup that is served on top of rice and chicken.

Imagine my surprise when I realized the delicious instant noodles I swear by in SF (when I need an instant noodle fix) is made of the same vegetable!

Here’s a recipe for the soup: now if only someone can tell me where to find frozen molokhia in San Francisco!

Ingredients:

2 cups of chicken stock
2 tablespoons chopped garlic
1 tablespoon ground coriander
1 tablespoon butter
1 package of frozen chopped molokhia

Directions:
1. In a pot, add the two cups of stock.
2. In a separate pan, melt the butter and adding both the ground coriander and half of the garlic.
3. Once the coriander and garlic have been covered in the butter, continue to stir while on high heat until the colour turns golden. Set aside.
4. In the stock add the remaining garlic. Also add the molokhia. If using frozen, it does not need to be thawed beforehand.
5. Once the molokhia has reached a hot, but not boiling temperature, add the coriander mixture and stir to ensure it is evenly distributed.

Amazing Saudi Arabia!

At first glance, Saudi Arabia seems to be characterized by black abayas and tan sand. But in my time there, I discovered so much color behind the closed doors! How can I possibly summarize it all for you? There are so many fascinating perspectives, depth, intricacies and sides to the country. After a week and a half, I cannot possibly have experienced, much less explain it all!

What I can do is share a few aspects that stick with me:

1) Signature Saudi hospitality: Generosity and hospitality accompanied me everywhere I went. People I’d barely met opened up their homes and invited us to stay. Knowing we were visiting for a week, they put their own plans on hold and showed us around their city, night after night. This is a culture where, if you mention you like something in someone’s house, more than likely someone will give it to you. I’ve never felt more welcome anywhere.

2) Enormous positivity: People look forward, rather than back, and are very positive about where their country is going. There are a lot of challenges: the biggest of which is creating jobs for the >50% of their population who is under 25, but the changes that King Abdullah has made have generated a lot of optimism for the future. I met some new friends who are starting Naqaa Environmental Enterprise, which will help businesses in Saudi Arabia start acting more sustainably — and their enthusiasm is infectious!

3) Delicious food: Food is embraced with a passion here: every dinner was characterized by an enormous spread of delicious dips, appetizers, grilled meats, soups, and more. The best hummus I’ve ever had: must be their chickpeas. Fish feast? Eaten on the ground, like a picnic. How much more fabulous can you get?

4) Dynamic markets: Colorful, embroidered, beaded dresses, fragrant woods and oils, spices and delicious dates overflow in stalls in El Balad, the “Old City” of Jeddah. Indulgence for all the senses!

All I can say is, if you ever get the chance, make the trip to Saudi Arabia. It will open your eyes in many ways, to a new beauty!

Off to Saudi Arabia!

After 2 weeks of waiting for the Saudi Arabian consulate to finally release my visa, I’m so excited to finally be off! I can’t wait to see such a mysterious country from the inside. To me, just like Saudi Arabian women wear colorful fashions under their black abayas, I can’t wait to see what rich culture exists underneath the mystique of the Kingdom…

My Manifesto

This is what I believe.

I believe that we are all capable of finding a luscious, juicy life that we LOVE!

That love for everyone in the world, including ourselves, is what makes the world go ’round. The more we allow love to flow, both in giving and receiving, the more we feed each others’ souls.

That we have to nurture the capability to create, to be resilient, and to be our best selves in every moment.

The engineer in me wants equations, so here it is:

Freedom + Inspiration + Belief (Love & Trust) –> Being Truly AliveĀ  –> Wondrous Creation

This blog is about these beliefs in the world: and how we can use them to influence

  • our lives
  • our business
  • how we achieve things

for not just the better, but the unbelievably amazing.

Thank you for joining me.
